When I first felt the "I want to make gyros too" feeling, I thought that a kitchen fairy who adheres to traditions and additive-free cuisine like me shouldn't have ready-to-buy stapled gyros "meat," or pre-spiced "bagged" meat into a camp of warmers. Something new, something else is needed. Together with our colleagues, we invented the spice combination ourselves, with which we marinate the chicken legs, and after marinating we pull them on skewers to bake them, nicely, slowly, as the big Greek recipe book says.
